The first recipe from an exclusive collection created for Robert Welch by London based chef Georgina Daviesis a simple, nutritious breakfast that can be prepared in advance and enjoyed hot or cold.
Overnight oats with orange, blueberry & apple
This is a brilliant prepare-ahead breakfast that can be grabbed as you run out of the door. Soaking the oats overnight makes them easier to digest and keeps you fuller for longer. Chia seeds are really nutrient dense and an amazing source of protein as well as adding a nice creamy texture. You can use whatever fruit you have, my favourite is a combination of berries, citrus and apple or pear.
Serves 2 | V | GF | DF
- 150g oats (GF)
- 1 tbsp chia seeds
- 1 orange, segmented
- 100g blueberries
- 350ml almond milk
- 1 tsp of maple syrup
- Pinch of salt
- 1 tsp of vanilla extract
- ½ tsp cinnamon
- Sprinkling of sunflower or pumpkin seeds
- 1 apple, chopped
Place all of the ingredients except the apple into a medium sized Tupperware box or bowl and mix. Cover and leave in the fridge overnight. In the morning, add the chopped apple and loosen with a little extra milk if needed. This is delicious as it is but also amazing warmed through in the microwave.
